Had a great shoot yesterday for Edible Maine, at Maine Sea Salt. I met with Steve, the owner, and he walked me threw the process and gave me a very educational tour. I used Maine Sea Salt at the White Barn Inn, for many years, and it was great to meet the maker and see his process. Its a very unrefined process, that's constantly growing. Most of the decisions and time is out of their hands, with mother nature making those decisions. He gets to loads of sea water, and over a typical three week period, it gets moved around the property to evaporate, dry, (sometimes smoked) and packaged.
